1. Prepare the Plantains
Peel the green plantains and cut them into 1-inch thick slices.
2. Fry the Plantains
Heat the oil in a large frying pan over medium heat. Fry the plantain slices until golden brown, about 4-5 minutes on each side. Remove and drain on paper towels.
3. Flatten the Plantains
Using a flat surface or a tostonera, smash each fried plantain slice into a flat disc, about 1/2 inch thick.
4. Second Fry
Return the flattened plantains to the hot oil and fry again until crispy, about 2-3 minutes on each side. Drain on paper towels.
5. Prepare the Filling
In a skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing until softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
6. Combine Chicken and Seasoning
Add the shredded chicken, salt, black pepper, cilantro, and lime juice to the skillet. Mix well and cook for another 2-3 minutes until heated through.
7. Stuff the Plantains
Take each crispy tostone and fill it with the chicken mixture. Serve warm.
