Directions for Veggie Wrap
- 1
Roast the Butternut Squash
Preheat your oven to 400°F (200°C). Peel and cube the butternut squash. Toss the cubes with olive oil, salt, and black pepper. Spread them in a single layer on a baking sheet and roast for about 25-30 minutes or until tender and slightly caramelized.
- 2
Prepare the Wraps
While the squash is roasting, prepare your tortilla wraps. Lay them out flat on a clean surface.
- 3
Assemble the Wrap
Spread a generous layer of garlic hummus on each tortilla wrap. Add a layer of roasted butternut squash, followed by fresh spinach, and slices of roasted red pepper. Sprinkle toasted pumpkin seeds on top.
- 4
Wrap It Up
Carefully roll each tortilla wrap tightly to enclose the filling. You can cut them in half or leave them whole.
- 5
Serve
Serve immediately or wrap them in foil or parchment paper for a portable meal.
