    Braised Brisket

    In the same pot, add 1 tablespoon of olive oil and the sliced onions. Cook until caramelized, about 10-15 minutes. Return the brisket to the pot, add enough water or beef broth to cover halfway, and bring to a simmer. Cover and transfer to the oven. Braise for about 3 hours or until tender.

    Roast Mushrooms

    While the brisket is braising, toss the sliced mushrooms with the remaining olive oil, salt, and pepper. Spread on a baking sheet and roast in the oven for about 20-25 minutes, until golden brown.

    Assemble Flatbreads

    Once the brisket is done, remove it from the pot and slice it thinly. On each flatbread, layer slices of brisket, roasted mushrooms, and brie cheese. Return the flatbreads to the oven at 180°C (350°F) for about 10 minutes or until the cheese is melted.

    Finish and Serve

    Drizzle the balsamic vinegar over the flatbreads, sprinkle with fresh thyme if using, and serve warm.
