    Prepare the Lobster

    In a large pot of boiling salted water, cook the lobster tails for about 8-10 minutes until bright red and cooked through. Remove and let cool, then shell and cut into chunks.

    Prepare the Potatoes

    Peel and dice the potatoes. Boil in salted water until tender, about 15 minutes. Drain and mash with a fork. Season with salt and pepper.

    Cook the Snap Peas

    In a small pot, bring water to a boil and blanch the snap peas for about 2-3 minutes. Drain and set aside.

    Make the Spiced Aioli

    In a bowl, mix mayonnaise with garlic powder, paprika, salt, and pepper. Adjust seasoning to taste.

    Prepare the Sourdough

    Toast the sourdough slices until golden brown.

    Prepare the Brown Butter

    In a small saucepan, melt the butter over medium heat until it turns golden brown and has a nutty aroma. Remove from heat.

    Assemble the Dish

    On each plate, layer the mashed potatoes, lobster chunks, and snap peas. Drizzle with brown butter, Mojo Verde, and top with a dollop of spiced aioli. Serve with a side of toasted sourdough and a spoonful of pepper jam.
