    Cook the Bacon

    In a large pot, cook the diced bacon over medium heat until crispy. Remove and drain on paper towels.

    Sauté Vegetables

    In the same pot, add butter, onion, and celery. Sauté until softened, about 5 minutes.

    Add Potatoes and Flour

    Stir in the diced potatoes and flour, cooking for another 2 minutes while stirring.

    Add Liquids

    Gradually whisk in the milk and heavy cream, followed by the clams and their juice. Bring to a simmer.

    Season and Serve

    Season with salt, pepper, and thyme. Simmer for 20 minutes until potatoes are tender. Serve hot.

For Shrimp Tomato Bisque

    Sauté Onion and Garlic

    In a saucepan, melt butter over medium heat. Add chopped onion and minced garlic, cooking until translucent.

    Add Tomatoes and Broth

    Stir in the crushed tomatoes and vegetable broth. Bring to a simmer.

    Cook the Shrimp

    Add the shrimp and cook until they turn pink, about 5 minutes.

    Blend and Add Cream

    Use an immersion blender to puree the soup until smooth. Stir in the heavy cream.

    Season and Serve

    Season with salt, pepper, and basil. Simmer for another 5 minutes and serve hot.
