Panko Cod Sandwich Recipe
Alaskan cod fillet encrusted with Japanese panko and fried, topped with melted cheese. Served on focaccia bread with lettuce, tomato, onion, and a side of roasted red pepper aioli. Served with fries or coleslaw.

Directions
Prepare the Cod
Season the cod fillets with salt and black pepper. Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and the last with panko breadcrumbs.
Bread the Cod
Dredge each cod fillet in flour, shaking off excess, then dip into the beaten eggs, and finally coat with panko breadcrumbs, pressing gently to adhere.
Fry the Cod
In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the breaded cod fillets and fry for 3-4 minutes on each side or until golden brown and cooked through. Place on paper towels to drain.
Melt the Cheese
During the last minute of cooking, place a slice of cheese on each cod fillet to melt.
Assemble the Sandwich
Toast the focaccia bread slices if desired. On the bottom half of each focaccia slice, place a piece of melted cheese cod, followed by lettuce, tomato, onion, and a generous spread of roasted red pepper aioli. Top with the other half of the focaccia.
Serve
Serve the Panko Cod Sandwich with a side of fries or coleslaw.
