Prepare the Chocolate Ganache
Chop the dark chocolate into small pieces and place it in a heatproof bowl. In a saucepan, heat the heavy cream over medium heat until it begins to simmer. Pour the hot cream over the chopped chocolate and let it sit for 2-3 minutes, then stir until smooth.

Mix the Eggs and Sugar
In a separate bowl, whisk together the eggs, granulated sugar, vanilla extract, and sea salt until well combined and slightly frothy.

Combine Mixtures
Slowly pour the chocolate ganache into the egg mixture, whisking constantly to prevent the eggs from scrambling. Mix until fully combined.

Bake the Dessert
Preheat the oven to 160°C (320°F). Pour the mixture into ramekins or a baking dish and place them in a larger baking pan filled with hot water (bain-marie). Bake for 25-30 minutes, or until the edges are set but the center is still slightly jiggly.

Cool and Serve
Remove the dessert from the oven and let it cool in the water bath for 15 minutes. Then, refrigerate for at least 2 hours before serving. Garnish with fresh berries and mint leaves before presenting.
