    Prepare the Cedar Plank

    Soak the cedar plank in water for at least 1 hour before cooking to prevent it from catching fire.

    Cook the Wild Rice

    In a saucepan, combine wild rice with 2 cups of water. Bring to a boil, reduce heat, cover, and simmer for 45 minutes or until rice is tender. Fluff with a fork and set aside.

    Prepare the Honey Gastrique

    In a small saucepan, combine honey and white wine vinegar. Heat over medium heat, stirring occasionally, until it thickens slightly (about 5 minutes). Set aside.

    Prepare the Salmon

    Preheat the grill or oven to 375°F (190°C). Pat the salmon fillet dry and season with salt and black pepper. Place the salmon skin-side down on the soaked cedar plank.

    Cook the Salmon

    Place the cedar plank on the grill or in the oven. Cook for about 20-25 minutes, or until the salmon is flaky and cooked through.

    Sauté the Vegetables

    While the salmon is cooking, heat olive oil in a skillet over medium heat. Add the chef's choice of vegetables and sauté for about 5-7 minutes until tender. Season with salt and pepper to taste.

    Serve

    Once the salmon is cooked, remove it from the cedar plank and drizzle with honey gastrique. Serve over wild rice with sautéed vegetables on the side.
