Seafood and Batter
Method
Preparation and Cooking
- 1
Prepare the Battering Mixture
In a large bowl, combine the flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold water until the batter is smooth and reaches a slightly thick consistency.
- 2
Prepare the Seafood
Cut the cod, salmon, and halibut into bite-sized pieces. If necessary, peel and devein the shrimp. Ensure the calamari and clams are clean and ready for cooking.
- 3
Heat the Oil
In a large deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
- 4
Fry the Seafood
Dip each piece of seafood into the batter, allowing excess to drip off. Carefully place them in the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and cooked through, about 3-4 minutes per batch.
- 5
Drain and Serve
Remove the fried seafood from the oil and place on paper towels to drain excess oil. Serve hot with sautéed vegetables and wild rice on the side.
