Method
Prepare the Calamari
Clean and Cut Calamari
Rinse the calamari tubes under cold water. Pat dry with paper towels and cut them into strips about 1/2 inch wide.
Set Up Breading Station
In three separate bowls, place the flour in one, beaten eggs in the second, and panko breadcrumbs mixed with salt and pepper in the third.
Bread the Calamari
Dredge each calamari strip in flour, then dip in eggs, and finally coat with panko breadcrumbs.
Fry the Calamari
In a large pot or deep fryer, heat oil to 350°F (175°C). Fry the calamari strips in batches until golden brown, about 2-3 minutes. Remove and drain on paper towels.
Make the Dipping Sauces
Prepare Tartar Sauce
In a bowl, mix together mayonnaise, dill pickles, capers, lemon juice, salt, and pepper until well combined.
Prepare Cocktail Sauce
In another bowl, combine ketchup, horseradish, lemon juice, and Worcestershire sauce. Mix well.
