Butter Pecan Trout

Method

Preparation and Cooking

  1. 1

    Prepare the Wild Rice

In a pot, combine wild rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 40-45 minutes until tender. Fluff with a fork when done.

  2. 2

    Prepare the Trout

Preheat the oven to 375°F (190°C). In a bowl, mix the melted butter, garlic powder, salt, and black pepper. Brush this mixture over the trout fillets.

  3. 3

    Crust the Trout

Press the finely chopped pecans onto the top of the trout fillets to create a crust.

  4. 4

    Bake the Trout

Place the trout fillets on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork.

  5. 5

    Sauté the Vegetables

While the trout is baking, heat olive oil in a skillet over medium heat. Add the mixed vegetables and sauté for about 5-7 minutes, or until they are tender but still crisp.

  6. 6

    Serve

Plate the baked butter pecan trout alongside a serving of wild rice and sautéed vegetables. Enjoy!
