Slaw Preparation

Prepare the Vegetables
Start by washing all the vegetables thoroughly under cold water.

Chop the Rainbow Chard
Remove the thick stems from the rainbow chard leaves, then chop the leaves into bite-sized pieces.

Slice the Cabbage
Thinly slice the red and green cabbage. Aim for uniform pieces to ensure even mixing.

Chop the Green Onions
Chop the green onions, including both the white and green parts, into small slices.

Chop the Cilantro
Rinse the cilantro, shake off excess water, and chop the leaves roughly.

Mix the Slaw
In a large mixing bowl, combine the chopped rainbow chard, sliced red and green cabbage, shredded carrots, chopped green onions, and cilantro.

Sprinkle the salt and black pepper over the mixed vegetables.

Drizzle the pure olive oil over the slaw mixture and toss everything well to coat evenly.
