    Prepare the Vegetables

    Start by washing and peeling the potatoes. Cut them into quarters for even cooking. Remove the leaves from the cauliflower and cut it into florets.

    Boil the Potatoes

    In a large pot, add the quartered potatoes and cover them with water. Bring to a boil over high heat and cook for about 10-15 minutes or until they are fork-tender.

    Boil the Cauliflower

    In a separate pot, add the cauliflower florets and cover with water. Bring to a boil and cook for about 5-7 minutes until tender. Drain and set aside.

    Roast the Garlic

    If you haven't roasted the garlic yet, preheat the oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil with a drizzle of olive oil and roast for about 30-35 minutes until soft and fragrant. Allow to cool, then squeeze the cloves out of their skins.

    Combine Ingredients

    In a large mixing bowl, combine the boiled potatoes, boiled cauliflower, roasted garlic, coconut milk, salt, black pepper, and olive oil.

    Mash the Mixture

    Using a potato masher or immersion blender, mash or blend the mixture until you reach your desired consistency. Add more coconut milk if you prefer a creamier texture.

    Taste and Adjust

    Taste the cauli potato mash and adjust seasoning with additional salt and pepper as needed.

    Serve

    Transfer the cauli potato mash to a serving bowl and drizzle with a little more olive oil if desired. Serve warm as a delicious side dish.
