Prepare the Fish

    Season the Grouper

    Pat the grouper fillets dry with paper towels. Rub both sides of the fillets with Cajun seasoning, ensuring they are well-coated.

    Cook the Fish

    In a skillet, heat olive oil over medium-high heat. Once hot, add the seasoned grouper fillets. Cook for 4-5 minutes on each side, or until the fish is cooked through and has a blackened crust. Remove from the skillet and let rest for a few minutes, then flake into large pieces.

    Heat the Tortillas

    In the same skillet used for the fish, briefly heat the hybrid flour-corn tortillas for about 30 seconds on each side until warm and pliable.

Assemble the Tacos

    Build the Tacos

    Lay a warmed tortilla on a plate. Add a generous amount of shredded lettuce, followed by the flaked blackened grouper, a scoop of street corn, crumbled feta cheese, and a sprinkle of chopped cilantro. Squeeze fresh lime juice over the top.
