    Chop the Vegetables

    Begin by washing and chopping the zucchini, bell peppers, mushrooms, and red onion into bite-sized pieces, ensuring they are uniform for even grilling.

    Prepare the Marinade

    In a mixing bowl, combine the balsamic vinegar, olive oil, minced garlic, dried oregano, salt, and black pepper. Whisk together until well blended.

    Marinate the Vegetables

    Add the chopped vegetables to the bowl with the marinade. Toss well to ensure all the vegetables are coated. Let them marinate for at least 30 minutes for maximum flavor.

Grilling

    Preheat the Grill

    Preheat your grill to medium-high heat, ensuring it's hot enough to get a good sear on the vegetables.

    Grill the Vegetables

    Once preheated, place the marinated vegetables directly onto the grill. Grill for about 10-12 minutes, turning occasionally, until they are tender and have nice grill marks.

    Add the Cheese

    In the last 2 minutes of grilling, place slices of provolone cheese on top of the grilled vegetables. Close the grill lid to help melt the cheese.

Serving
