Vodka Sauce
Method
Cooking the Pasta
Boil Water
In a large pot, bring water to a boil. Add salt once boiling.
Cook Pasta
Add penne pasta to the boiling water and cook according to package instructions until al dente. Drain and set aside.
Making the Vodka Sauce
Sauté Aromatics
In a large skillet, heat olive oil over medium heat. Add chopped shallots and cook until translucent, about 2-3 minutes. Add minced garlic and red pepper flakes, cooking for an additional 1 minute.
Add Vodka
Carefully pour in the vodka and let it simmer for about 3-4 minutes, allowing the alcohol to cook off.
Incorporate Tomatoes
Stir in the crushed tomatoes and bring the mixture to a simmer. Let it cook for about 10 minutes.
Add Cream and Cheese
Reduce heat to low, then add in the heavy cream and grated Parmesan cheese. Stir well until the cheese is melted and the sauce is smooth.
Season the Sauce
Season the sauce with salt and black pepper to taste. Stir in the chopped fresh basil just before serving.
Combining and Serving
Combine Pasta and Sauce
Add the drained penne pasta to the vodka sauce, tossing to combine until the pasta is well-coated.
Serve
Serve hot, garnished with additional grated Parmesan cheese and fresh basil if desired.
