Fresh mozzarella rolled in prosciutto di Parma then sautéed to a crisp and served over a bed of spring mix and cherry tomatoes

Prepare the Mozzarella
Slice the fresh mozzarella into 1/4 inch thick slices.

Wrap with Prosciutto
Take each slice of mozzarella and carefully wrap it with a slice of prosciutto. Make sure the mozzarella is fully covered. Repeat for all slices.

Heat the Olive Oil
In a large skillet, heat the olive oil over medium heat until shimmering.

Sauté the Rollantini
Place the prosciutto-wrapped mozzarella in the skillet. Cook for about 2-3 minutes on each side, or until the prosciutto is crisp and the mozzarella is softened.
Serving

Assemble the Salad
In a large bowl, combine the spring mix and cherry tomatoes. Drizzle with balsamic glaze, and season with salt and black pepper. Toss gently to combine.

Plate the Dish
Place a generous serving of the spring mix salad on each plate, and top with the sautéed prosciutto rollantini. Drizzle with additional balsamic glaze if desired.
