Pasta Preparation

Cook the Orecchiette
Bring a large pot of salted water to a boil. Add the orecchiette pasta and cook according to package instructions until al dente, usually about 9-11 minutes. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Cook the Sausage
In a large skillet over medium heat, add the olive oil. Once hot, crumble the spicy Italian sausage into the skillet and cook until browned, about 5-7 minutes. Use a spatula to break it into smaller pieces as it cooks.

Add Garlic and Red Pepper Flakes
Stir in the minced garlic and red pepper flakes, cooking for an additional 1-2 minutes until the garlic is fragrant.

Incorporate Broccolini
Add the broccolini to the skillet and sauté for about 3-4 minutes until tender. If needed, add a splash of the reserved pasta water to help steam the broccolini.

Deglaze with White Wine
Pour in the white wine and let it simmer for 2-3 minutes, allowing the alcohol to evaporate and the sauce to reduce slightly.

Combine Pasta and Sauce
Add the drained orecchiette to the skillet, tossing to combine with the sausage and broccolini. If the mixture seems dry, add more of the reserved pasta water until desired consistency is reached. Season with salt and black pepper to taste.

Serve
Remove from heat and sprinkle with grated Parmesan cheese before serving. Enjoy your orecchiette warm!
