Preparation of Mussels

    Clean the Mussels

    Rinse the blue mussels under cold water, scrubbing the shells to remove any debris. Remove the beards by pulling them off firmly.

    Steam the Mussels

    In a large pot, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Pour in 1 cup of white wine and bring to a simmer. Add the cleaned mussels, cover the pot, and steam for about 5-7 minutes or until the mussels open. Discard any that do not open.

    Garnish

    Finely chop fresh parsley and set aside. Squeeze the juice of 1 lemon over the steamed mussels before serving.

Preparation of White Sauce

    Make the White Sauce

    In a saucepan over medium heat, melt 4 tablespoons of butter. Stir in 1 cup of heavy cream and bring to a gentle simmer. Add garlic powder, grated Parmesan cheese, salt, and black pepper. Stir until the cheese is melted and the sauce is smooth.

Preparation of Red Sauce

    Make the Red Sauce

    In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add 1 cup of chopped onion and sauté until translucent. Stir in 2 cups of chopped tomatoes, crushed red pepper flakes, basil, salt, and black pepper. Simmer for about 15 minutes until the sauce thickens.

Preparation of Arrabbiata Sauce

    Make the Arrabbiata Sauce

    In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add 4 chopped garlic cloves and sauté until golden. Stir in 2 cups of chopped tomatoes, crushed red pepper flakes, salt, and black pepper. Simmer for about 10 minutes until the sauce is heated through.
