    Prepare the Eggplant

    Slice the eggplants into 1/4 inch thick rounds. Sprinkle them with salt and let them sit for about 30 minutes to draw out moisture. Rinse off the salt and pat dry with paper towels.

    Bread the Eggplant

    Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Dip each eggplant slice in flour, shaking off the excess, then into the eggs, and finally coat with breadcrumbs.

    Fry the Eggplant

    In a large skillet, heat olive oil over medium heat. Once hot, fry the breaded eggplant slices in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.

    Layer the Ingredients

    In a baking dish, spread a layer of marinara sauce on the bottom. Add a layer of fried eggplant slices, followed by a layer of mozzarella cheese and fresh basil leaves. Repeat the layers until all ingredients are used, finishing with mozzarella cheese on top.

    Bake the Dish

    Preheat your oven to 375°F (190°C). Bake the layered dish for about 25-30 minutes, or until the cheese is melted and bubbly.
