Ravioli Dough

    Prepare Dough

    In a large bowl, mix together the flour and salt. Make a well in the center and add the eggs and olive oil.

    Combine Ingredients

    Using a fork, gradually incorporate the flour into the egg mixture until a dough forms.

    Knead Dough

    Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.

    Rest Dough

    Wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature.

Lobster Filling

    Mix Filling

    In a bowl, combine the chopped lobster meat, ricotta cheese, grated Parmesan cheese, chives, lemon zest, salt, and black pepper.

    Combine Ingredients

    Stir until the mixture is well combined and creamy.

Assembling Ravioli

    Roll Dough

    Divide the rested dough into quarters. Roll out each quarter into thin sheets using a pasta machine or a rolling pin.

    Fill Ravioli

    Place teaspoonfuls of the lobster filling onto one sheet, spacing them about 2 inches apart.

    Seal Ravioli

    Moisten the edges of the dough with water, and place another sheet of dough over the filling. Press down gently to seal.

    Cut Ravioli

    Cut out the ravioli using a pasta cutter or knife. Repeat with remaining dough and filling.

Vodka Sauce

    Sauté Garlic

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.

    Add crushed tomatoes and vodka, simmer for 5 minutes.

    Stir in heavy cream, grated Parmesan cheese, red pepper flakes, salt, and black pepper. Cook for an additional 5 minutes until heated through.

    Stir in fresh basil before serving.

Cooking Ravioli

    Cook Ravioli

    Bring a large pot of salted water to a boil. Add the ravioli and cook for 4-5 minutes until they float to the top.

    Remove the ravioli with a slotted spoon and drain.

    Serve the ravioli topped with the vodka sauce and garnish with extra basil and Parmesan cheese if desired.
