For Grilled Grouper
1. Prepare the Marinade
In a bowl, whisk together olive oil, lemon juice, minced garlic, salt, and black pepper.
2. Marinate the Fish
Place the grouper fillet in a shallow dish and pour the marinade over it. Let it marinate for at least 30 minutes.
3. Preheat the Grill
Preheat your grill to medium-high heat.
4. Grill the Grouper
Remove the grouper from the marinade, allowing excess marinade to drip off. Place the fillet on the grill and cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork.
5. Garnish and Serve
Remove the grilled grouper from the grill, sprinkle with fresh parsley, and serve with lemon wedges.
For Franchised Grouper
6. Prepare the Breading Station
Set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.
7. Season the Flour
Add salt and black pepper to the flour and mix well.
8. Bread the Grouper
Dredge the grouper fillet in flour, shaking off excess, then dip it in the beaten eggs, and finally coat it with breadcrumbs.
9. Heat the Oil
In a large skillet, heat olive oil over medium heat until hot.
10. Fry the Grouper
Carefully place the breaded grouper fillet in the hot oil and cook for about 4-5 minutes on each side, or until golden brown and cooked through.
11. Serve
Remove from the skillet and drain on paper towels. Serve with lemon wedges on the side.
For Puttanesca Style Grouper
12. Sauté Garlic
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
13. Add Tomatoes and Seasonings
Stir in canned diced tomatoes, chopped olives, capers, and red pepper flakes. Season with salt to taste. Simmer for 5-7 minutes.
14. Add the Grouper
Gently place the grouper fillet into the skillet, spooning some sauce over the top. Cover and cook for 8-10 minutes or until the fish is cooked through and flakes easily with a fork.
15. Garnish and Serve
Sprinkle chopped fresh basil over the top and serve hot with crusty bread.
