Prepare Grilled Chicken

Marinate the Chicken
In a bowl, combine olive oil, salt, black pepper, and garlic powder. Add the chicken breasts and coat them well. Allow marinating for at least 30 minutes.

Grill the Chicken
Preheat a grill or grill pan over medium-high heat. Grill the marinated chicken for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for 5 minutes before slicing.
Sauté Mushrooms & Sun-Dried Tomatoes

Add Sun-Dried Tomatoes
Stir in the chopped sun-dried tomatoes and cook for an additional 2-3 minutes until heated through.
Prepare Balsamic Glaze

Make the Balsamic Glaze
In a small saucepan over medium heat, bring the balsamic vinegar to a simmer. Reduce the heat to low and let it cook for about 10-15 minutes, or until it thickens and reduces by half. Remove from heat and allow to cool slightly.
Assemble the Salad

Combine Ingredients
In a large bowl, toss the mixed greens. Top with the sliced grilled chicken, sautéed mushrooms, and sun-dried tomatoes.

Drizzle with Balsamic Glaze
Drizzle the prepared balsamic glaze over the top of the salad before serving.
