For the Gnocchi

    Cook the Potatoes

    Boil the potatoes in a large pot of salted water until fork-tender, about 15-20 minutes. Drain and let them cool slightly.

    Mash the Potatoes

    Peel the potatoes and mash them in a bowl until smooth. Allow to cool completely.

    Make the Dough

    Add the flour, egg, and salt to the mashed potatoes. Mix until a dough forms. If the dough is too sticky, add more flour, a tablespoon at a time.

    Shape the Gnocchi

    Divide the dough into sections. Roll each section into a rope about 1/2 inch thick. Cut into 1-inch pieces. Press each piece with a fork to create ridges.

For the Pomodoro Sauce

    Sauté the Garlic

    In a saucepan, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

    Cook the Tomatoes

    Add the canned tomatoes (with juices), salt, and black pepper to the saucepan. Crush the tomatoes with a spoon and bring to a simmer. Cook for 15 minutes.

    Add Basil

    Tear the fresh basil leaves and stir them into the sauce. Cook for an additional 5 minutes.

For Assembly

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Combine Gnocchi and Sauce

    In a large baking dish, spread half of the pomodoro sauce on the bottom. Layer the gnocchi over the sauce, then pour the remaining sauce on top.

    Add Mozzarella

    Arrange the slices of fresh mozzarella evenly over the top of the gnocchi.

    Bake

    Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.

    Serve

    Garnish with fresh basil leaves and sprinkle grated Parmesan cheese before serving.
