Preparation of the Base

Heat Milk and Cream
In a saucepan, combine the whole milk and heavy cream. Heat over medium heat until it is hot but not boiling.

Whisk Egg Yolks and Sugar
In a bowl, whisk together egg yolks and granulated sugar until the mixture is pale and slightly thickened.

Cook the Mixture
Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon.

Add Vanilla Extract
Remove from heat and stir in the vanilla extract. Let the mixture cool to room temperature.
Flavoring and Churning

Incorporate Flavorings
Once the base is cool, you can add your choice of flavorings: mix in chocolate, fresh fruits, Nutella, or coffee, depending on your desired gelato flavor.

Chill the Mixture
Refrigerate the mixture for at least 4 hours or overnight to ensure it's very cold.

Churn the Gelato
Pour the cold mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Transfer the churned gelato to an airtight container and freeze for at least 4 hours to firm up.
