Clams Preparation
- 1
Prepare the Clams
Rinse the clams under cold water to remove any sand or grit. Place them in a bowl of fresh water for about 30 minutes to help purge any remaining sand.
- 2
Cook the Sausage
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up with a spoon, about 5-7 minutes.
- 3
Add Garlic and Wine
Add the minced garlic to the skillet and sauté for about 1 minute until fragrant. Then, pour in the white wine and bring to a simmer.
- 4
- 5
Add Parsley and Finish
Once the clams are opened, stir in the chopped parsley and remove from heat. Mix in the bread crumbs and grated Parmesan cheese until well combined.
Crostini Preparation
- 6
Prepare the Baguette
Preheat your oven to 400°F (200°C). Slice the baguette into 1/2 inch thick slices.
- 7
Brush with Olive Oil
Place the baguette slices on a baking sheet and brush each slice with olive oil. Bake in the preheated oven for about 5-7 minutes until golden and crispy.
- 8
Rub with Garlic
Once baked, remove the crostini from the oven and immediately rub the top of each slice with the halved garlic clove for added flavor.
