Main Preparation

Prepare Chicken
Place each chicken breast between two pieces of plastic wrap and gently pound until about 1/2 inch thick.

Layer Ingredients
Place 2 slices of prosciutto on each chicken breast, followed by 3 sage leaves. Press down gently to adhere.

Coat Chicken
Dredge each chicken breast lightly in flour, shaking off any excess.
Cooking Chicken

Heat Oil and Butter
In a large skillet, heat olive oil and 1 tablespoon of butter over medium heat until hot.

Cook Chicken
Add the chicken breasts, sage side down, to the skillet. Cook for 4-5 minutes until golden brown, then flip and cook for another 4-5 minutes until fully cooked.

Remove Chicken
Transfer the cooked chicken to a plate and cover to keep warm.
Making Madeira Sauce

Deglaze Skillet
In the same skillet, add Madeira wine and scrape the bottom of the pan to release any browned bits. Bring to a simmer.

Add Broth and Cream
Add chicken broth and heavy cream to the skillet. Stir to combine and let simmer for 5-7 minutes until the sauce thickens slightly.

Season Sauce
Season sauce with salt and black pepper to taste.
Serving

Plate the Dish
Place chicken on serving plates, drizzle with Madeira sauce, and garnish with additional sage leaves if desired.
