Pasta Dough Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs. Using a fork, gradually mix the flour into the eggs until a dough forms.

    Knead the Dough

    Transfer the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

Cheese Filling Preparation

    Mix the Cheese Filling

    In a mixing bowl, combine ricotta, mozzarella, Parmesan, Gorgonzola, black pepper, and salt. Mix until well combined and set aside.

Pomodoro Sauce Preparation

    Cook the Sauce

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Stir in the crushed tomatoes and bring to a simmer.

    Add Seasoning

    Add fresh basil, salt, and black pepper to the sauce. Let it simmer for 15-20 minutes, stirring occasionally.

Ravioli Assembly and Cooking

    Roll Out the Dough

    After the dough has rested, divide it into four pieces. Roll out each piece into thin sheets using a pasta machine or a rolling pin.

    Fill the Ravioli

    Place small spoonfuls of the cheese filling on one sheet of dough, spacing them about 2 inches apart. Brush the edges of the dough with water, then place another sheet of dough on top and press down to seal.

    Cut the Ravioli

    Using a sharp knife or pastry cutter, cut between the mounds of filling to create the ravioli shapes. Ensure the edges are sealed well.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for 3-4 minutes or until they float to the surface. Remove with a slotted spoon.

    Serve

    Plate the cooked ravioli and top with the pomodoro sauce. Garnish with additional basil or grated cheese if desired.
