Dough Preparation

    Combine Dry Ingredients

    In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, and salt until well combined.

    Incorporate Butter

    Add the unsalted butter to the flour mixture and mix it with your fingers or a pastry cutter until the mixture resembles coarse crumbs.

    Add Wet Ingredients

    Stir in the egg yolks and white wine (or vinegar) until a dough begins to form.

    Knead the Dough

    Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for at least 30 minutes.

Filling Preparation

    Mix Filling Ingredients

    In a mixing bowl, combine the ricotta cheese, powdered sugar, vanilla extract, and mini chocolate chips. Mix until smooth and well blended.

    Chill the Filling

    Cover the filling and refrigerate for at least 30 minutes to firm up.

Frying Cannoli

    Roll Out Dough

    After the dough has rested, roll it out on a floured surface to about 1/8 inch thick. Cut into circles of about 5 inches in diameter.

    Shape Cannoli

    Wrap each dough circle around a cannoli form, sealing the edge with a little water.

    Heat Oil for Frying

    In a deep skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry Cannoli

    Carefully add the wrapped cannoli to the hot oil and fry until golden brown, about 2-3 minutes per side. Use tongs to turn them as needed.

    Drain and Cool

    Remove the cannoli from the oil and place them on paper towels to drain excess oil. Allow them to cool slightly before removing the forms.

Assembling Cannoli

    Once the cannoli shells are cool, use a piping bag to fill each shell with the chilled ricotta filling.

    Garnish

    Sprinkle the ends of the filled cannoli with chopped pistachios if desired, and dust with powdered sugar before serving.
