Thoroughly wash the fresh spinach under cold running water. Drain and pat dry with a clean kitchen towel or use a salad spinner to remove excess moisture.

On a serving platter, arrange the sliced fresh mozzarella in a circular pattern. Spoon dollops of the ricotta cheese evenly across the mozzarella slices.
