Red Wine-Shallot Reduction

Method

Preparation of the Burger Patty

    Form the Patty

    In a bowl, combine the ground beef, salt, and black pepper. Mix gently until just combined. Form into one 8 oz. patty.

    Broil the Patty

    Preheat the wood oven to high heat. Place the beef patty on the broiler rack and cook for 4-5 minutes on each side, or until it reaches the desired doneness.

Red Wine-Shallot Reduction

    Cook Shallots

    In a saucepan, heat the olive oil over medium heat. Add the finely chopped shallots and sauté until soft and translucent, about 3-4 minutes.

    Add Red Wine

    Pour in the red wine and bring to a simmer. Reduce the heat and let it simmer until the sauce reduces by half and thickens, about 15-20 minutes. Set aside.

Toppings and Assembly

    Caramelize Onions

    In a skillet, add a little olive oil and sauté the sliced onions over medium-low heat until they are caramelized and golden brown, about 15 minutes.

    Melt the Cheese

    During the last minute of broiling the burger, sprinkle the shredded asiago cheese on top of the patty. Close the oven and let it melt.

    Prepare the Focaccia

    Spread the creole mustard and mayonnaise on the slices of rosemary focaccia. Layer with arugula and tomato slices on one slice.

    Assemble the Burger

    Place the broiled patty with melted asiago on top of the tomato and arugula. Add the caramelized onions on top and close the sandwich with the other focaccia slice.

Crispy Onion Rings

    Prepare the Breading

    In a bowl, mix together the flour, cornmeal, baking powder, and salt. Gradually add cold water until a thick batter forms.

    Fry the Onion Rings

    Heat oil in a deep fryer or large pot to 350°F (175°C). Dip the onion rings into the batter, allowing excess to drip off, and carefully drop them into the hot oil. Fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.
