Method

Preparation of Olives

  1. 1

    Combine the Olives

In a large mixing bowl, combine the Green Castelvetrano olives and Black Cerignola olives. Set aside.

Marinade Preparation

  1. 2

    Mix the Marinade

In a separate bowl, whisk together the olive oil, minced garlic, lemon zest, orange zest, fresh thyme, red pepper flakes, salt, and black pepper until well combined.

Marinating Process

  1. 3

    Marinate the Olives

Pour the marinade over the olives. Gently toss to ensure that all olives are well coated with the marinade.

  2. 4

    Let it Sit

Cover the bowl with plastic wrap or a lid and let the olives marinate at room temperature for at least 30 minutes. For best flavor, marinate for up to 2 hours.

Serving

  1. 5

    Warm the Olives

Preheat your oven to 350°F (175°C). Spread the marinated olives in a single layer on a baking sheet and warm in the oven for about 10 minutes.

  2. 6

    Serve

Transfer the warm olives to a serving dish. Drizzle any leftover marinade over the top and serve immediately.
