Preparation of Cured Meats and Cheeses

Arrange the Meats
On a large wooden board or platter, arrange the prosciutto, salami, capicola, and bresaola in a visually appealing manner. Roll or fold the slices for added texture and presentation.

Cut the Cheeses
Slice the Parmesan, Gorgonzola, Mozzarella, and Pecorino into bite-sized pieces or wedges. Place them around the cured meats on the platter.
Preparing Accompaniments

Add Olives
Place the mixed olives in a small bowl and add them to the platter for a colorful addition.

Slice Focaccia
Cut the focaccia bread into squares or triangles and arrange them on the platter. This will serve as an excellent accompaniment to the meats and cheeses.

Garnish with Cherry Tomatoes and Basil
Scatter the cherry tomatoes and fresh basil leaves around the platter to add freshness and color.
Making Spiedini

Assemble Spiedini
On small skewers, thread one cherry tomato, followed by a mozzarella ball, and then a fresh basil leaf. Repeat until all ingredients are used.
