Prepare the Sauce

    Sauté Garlic

    In a large saucepan, heat the extra virgin olive oil over medium heat. Add the shaved garlic and sauté for about 2-3 minutes, or until fragrant and lightly golden. Be careful not to burn the garlic.

    Add Tomatoes

    Carefully pour in the canned whole tomatoes (with their juices) into the saucepan. Use a wooden spoon to break up the tomatoes into smaller pieces.

    Season the Sauce

    Stir in the salt, black pepper, dried Greek oregano, and red pepper flakes. Mix well to combine all the ingredients.

Simmer the Sauce

    Bring the sauce to a gentle simmer. Reduce the heat to low and let it cook uncovered for about 20-25 minutes, stirring occasionally. This will allow the flavors to meld together.

    Taste the sauce and adjust seasoning if necessary, adding more salt or pepper to taste.
