    Heat Olive Oil

    In a large saucepan, heat 2 tablespoons of olive oil over medium heat until shimmering.

    Sauté Garlic

    Add the shaved garlic cloves to the pan and sauté for about 1-2 minutes, or until fragrant and lightly golden. Be careful not to burn the garlic.

    Add Tomatoes

    Pour in the 28 ounces of canned crushed tomatoes, stirring to combine with the garlic and olive oil.

    Season the Sauce

    Add 2 teaspoons of dried Greek oregano, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of red pepper flakes to the sauce. Stir well to combine.

    Simmer the Sauce

    Bring the sauce to a simmer. Reduce the heat to low and let it simmer uncovered for 20-30 minutes, stirring occasionally, until it thickens slightly.

    Add Fresh Basil

    Stir in 1 cup of torn fresh basil leaves into the sauce just before serving for a burst of flavor.
