Preparation

Prepare the Braised Pork
If not already prepared, braise the pork in a slow cooker or on the stovetop with spices, onions, and broth until tender. Shred the meat and set aside.

Crisp the Pancetta
In a skillet, cook the pancetta over medium heat until crispy. Remove from heat and drain on paper towels.

Prepare the Pineapple
Cut the fresh pineapple into small chunks, about 1-inch pieces.

Chop Garlic
Finely chop the garlic and set aside.
Assembly

Combine Ingredients
In a large mixing bowl, combine the shredded braised pork, crispy pancetta, pineapple chunks, and red sauce. Mix well until all ingredients are evenly coated.

Spread the Mixture
Spread the combined mixture evenly onto a baking dish or pizza base.

Add Cheese
Sprinkle the fior di latte and Pecorino-Romano cheese evenly over the top of the mixture.

Preheat the oven to 400°F (200°C). Bake the assembled dish for 15-20 minutes, or until the cheese is melted and bubbly.

In a small frying pan, heat the extra virgin olive oil over medium heat. Add the chopped garlic and sauté until golden, about 1-2 minutes. Remove from heat and drizzle over the baked dish. Sprinkle with shaved red onion and chili flakes before serving.
