Preparing the Dough

Activate the Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.

Mix the Dough
In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the activated yeast mixture and olive oil.

Knead the Dough
Mix until a dough forms, then transfer it to a floured surface. Knead the dough for about 8-10 minutes until smooth and elastic.

Let the Dough Rise
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, until it has doubled in size.
Assembling the Pizza

Preheat the Oven
Preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat.

Roll Out the Dough
Once the dough has risen, punch it down and transfer it to a floured surface. Roll it out into your desired pizza shape and thickness.

Add the Sauce
Spread the red sauce evenly over the rolled-out dough, leaving a small border around the edges.

Sprinkle the mozzarella cheese over the sauce and then layer the hand-cut pepperoni slices on top.

Sprinkle dried Greek oregano and grated Pecorino-Romano cheese over the top for added flavor.

Carefully transfer the pizza onto the hot stone or baking sheet in the oven. Bake for 10-12 minutes or until the crust is golden and the cheese is bubbly.
