Preparation of Meats
- 1
Cook Ground Beef
In a skillet over medium heat, cook the ground beef until browned, about 8-10 minutes. Drain any excess fat and set aside.
- 2
Prepare Roasted Chicken
If using leftover roasted chicken, shred it into bite-sized pieces. If cooking from raw, roast chicken in the oven at 200°C (400°F) for 25-30 minutes or until fully cooked, then shred.
- 3
Braised Pork
Braised pork can be prepared by slow-cooking pork shoulder with spices and broth for 4-6 hours or until fork-tender. Shred the pork once cooked.
Assembly
- 4
Layer Ingredients
In a large bowl, begin layering your ingredients: start with the cooked ground beef, followed by the shredded chicken and braised pork.
- 5
Add Vegetables
Next, add black beans, roasted sweet corn, and pickled jalapenos on top of the meats.
- 6
Add Cheeses
Sprinkle jack cheese, fior di latte, and Pecorino Romano evenly over the layered ingredients.
Final Touches
- 7
Drizzle with Sauces
Pour the red sauce over the entire dish, followed by a generous drizzle of tomatillo lime avocado cream.
- 8
Garnish
Finish with a scoop of pico de gallo on top, and serve immediately.
