Braised Pork Preparation

    Sauté Aromatics

    In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion and minced garlic, sauté until the onion is translucent, about 5 minutes.

    Brown the Pork

    Season the pork shoulder with cumin, oregano, salt, and black pepper. Add the pork to the pot and brown on all sides, about 8-10 minutes.

    Add Liquid and Simmer

    Pour in the chicken broth and add bay leaves. Bring to a simmer, cover, and reduce the heat to low. Cook for 2-3 hours until the pork is tender and easily shredded.

    Shred the Pork

    Remove the pork from the pot and let it cool slightly. Shred the pork with two forks and return it to the pot to soak up the juices for about 10 minutes.

Sandwich Assembly

    Prepare the Bread

    Slice the Cuban bread or hoagie rolls in half lengthwise. If desired, lightly toast them in a pan or oven to add some crunch.

    Spread Mustard and Aioli

    On the bottom half of each roll, spread the creole mustard. On the top half, spread the Calabrian chile aioli.

    Layer the Ingredients

    Layer shredded braised pork, prosciutto di Parma, sliced pickles, and provolone cheese onto the bottom half of the roll.

    Close and Serve

    Close the sandwich with the top half of the roll. Serve immediately and enjoy your Il Cubano!
