Prepare the Bread and Cheese
Take two slices of ciabatta bread and drizzle olive oil on one side of each slice. This will help to achieve a nice golden crust when grilled.

Add Filling
On the un-oiled side of one slice, layer the mozzarella cheese, cheddar cheese, and fresh basil leaves. Sprinkle with salt and pepper to taste. Top with the other slice of bread, oiled side facing outward.

Grill the Panini
Preheat a grill pan or panini press over medium heat. Place the assembled panini on the grill and cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted. Press down with a spatula for even cooking.

Prepare the Onion
Peel the onion and slice it into 1/4 inch thick rings. Separate the rings and set aside.

Make the Batter
In a mixing bowl, combine flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold water until you have a smooth batter. It should be thick enough to coat the onion rings.

Heat the Oil
In a deep frying pan, heat vegetable oil over medium-high heat. You need enough oil to fully submerge the onion rings.

Fry the Onion Rings
Dip each onion ring into the batter, allowing excess to drip off, then carefully place in the hot oil. Fry in batches until golden brown, about 2-3 minutes per side. Remove from oil and drain on paper towels.
