Preparing the Mushrooms

    Clean and Slice the Mushrooms

    Clean the portobello and white button mushrooms with a damp cloth. Remove the stems and slice the portobello mushrooms into thick slices. Leave the white mushrooms whole or slice them if they are large.

    Roast the Mushrooms

    Preheat your grill or oven to 400°F (200°C). Place the mushrooms on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 15-20 minutes until tender and golden.

Making the Red Sauce

    Heat Olive Oil

    In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.

    Add Tomatoes and Seasoning

    Stir in the canned crushed tomatoes, dried oregano, salt, and black pepper. Let the sauce simmer for about 15 minutes, stirring occasionally.

Assembling the Dish

    Layering

    In a baking dish, spread a layer of red sauce on the bottom. Arrange the roasted portobello and white mushrooms evenly on top.

    Add Cheese and Herbs

    Sprinkle the shredded mozzarella cheese over the mushrooms, followed by the grated Pecorino-Romano cheese. Top with chopped fresh tarragon.

Final Baking

    Preheat your oven to 375°F (190°C). Bake the assembled dish for 20-25 minutes or until the cheese is bubbly and golden.

    Remove from the oven, garnish with chopped fresh parsley, and serve hot.
