Method

Crust Preparation

  1. 1

    Make the Dough

In a large mixing bowl, combine the all-purpose flour, powdered sugar, and salt. Add the softened unsalted butter and mix until crumbly. Stir in the egg yolk and ice water until the dough comes together.

  2. 2

    Chill the Dough

Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

  3. 3

    Roll and Bake

After chilling, roll out the dough on a floured surface to fit a 9-inch tart pan. Place the rolled dough into the pan and trim the edges. Prick the bottom with a fork and bake in a preheated oven at 350°F (175°C) for 15-20 minutes or until lightly golden. Remove from oven and let cool.

Filling Preparation

  1. 4

    Prepare the Filling

In a medium bowl, whisk together the granulated sugar, eggs, and additional egg yolks until well combined. Add in the fresh lemon juice and lemon zest, mixing until smooth.

  2. 5

    Add Cream

Gently fold in the heavy cream until fully incorporated.

  3. 6

    Fill the Crust

Pour the lemon filling into the cooled crust and spread evenly.

  4. 7

    Bake the Tart

Bake in the oven at 350°F (175°C) for 25-30 minutes, or until the filling is set and slightly jiggly in the center. Remove from the oven and allow to cool completely.

Serving

  1. 8

    Prepare for Serving

Once the tart has cooled, slice it into wedges. Serve each piece with a scoop of blood orange sorbetto and a handful of mixed berries on the side.
