In a small saucepan, heat the extra virgin olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes. Be careful not to burn the garlic. Remove from heat and set aside.

In a large mixing bowl, combine the gorgonzola, fontina, mozzarella, ricotta, and Pecorino-Romano cheeses. Mix until well combined and set aside.

Assemble the Dish
Preheat your oven to 180°C (350°F). In a baking dish, layer the cheese mixture evenly across the bottom. Pour the prepared garlic oil over the cheese, ensuring even coverage. Scatter the halved grape tomatoes on top.

Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the cheese is bubbly and golden brown. Remove from the oven and let it cool for a few minutes before serving.
