Preparing the Artichokes

    Clean the Artichokes

    Start by trimming the stems of the artichokes and removing the tough outer leaves until you reach the tender inner leaves. Cut off about an inch from the top of each artichoke. Slice the artichokes in half lengthwise and scoop out the fuzzy choke with a spoon.

    Prepare the Coating

    In three separate bowls, place the flour mixed with salt and pepper in the first bowl, beaten eggs in the second bowl, and the breadcrumbs in the third bowl.

    Coat the Artichokes

    Take each artichoke half, dip it into the flour mixture, then into the beaten eggs, and finally coat it with breadcrumbs. Make sure they are well-coated for a crispy texture.

Frying the Artichokes

    Heat the Oil

    In a large frying pan, heat the vegetable oil over medium-high heat until it reaches about 350°F (175°C). You can test if the oil is ready by dropping in a breadcrumb; it should sizzle immediately.

    Fry the Artichokes

    Carefully place the coated artichoke halves into the hot oil, frying in batches to avoid overcrowding. Fry for about 3-4 minutes on each side, or until they turn golden brown and crispy.

    Once fried, use a slotted spoon to remove the artichokes from the oil and place them on a plate lined with paper towels to drain any excess oil.

Making the Spicy Garlic Aioli

    In a mixing bowl, combine the mayonnaise, minced garlic cloves, lemon juice, cayenne pepper, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

    Taste the aioli and adjust the seasoning with more salt or cayenne pepper if desired.
