Prepare the Tomatoes
Preheat your wood oven to a high temperature, around 450°F (232°C). Place the grape tomatoes on a baking sheet. Drizzle lightly with olive oil and season with salt and pepper to taste. Toss to coat evenly.

Blister the Tomatoes
Once the oven is hot, place the baking sheet with the tomatoes inside. Roast for about 10-12 minutes or until the tomatoes are blistered and slightly charred. Remove from the oven and set aside.

Slice the Mozzarella
While the tomatoes are roasting, slice the fresh mozzarella cheese into thick rounds (about 1/4 inch thick).

Grate the Parmigiano
Using a grater, finely grate the Parmigiano-Reggiano cheese and set aside.
Assembly

Layer the Ingredients
On a serving platter, arrange the blistered grape tomatoes in a single layer. Top with slices of fresh mozzarella.

Add Pesto and Glaze
Drizzle basil pesto over the mozzarella and tomatoes, then drizzle balsamic glaze over the top for added flavor.

Garnish
Sprinkle the finely grated Parmigiano-Reggiano cheese over the entire dish. Finally, garnish with fresh basil leaves.
