Making the Pie Crust

Prepare the Dough
In a large bowl, combine flour, sugar, and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in ice water, a tablespoon at a time, until dough forms a ball. Divide dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

Combine Ingredients
In a large bowl, toss apple slices with granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, flour, and vanilla extract until well coated.
Assembling the Pie

Fill the Pie
Pour the apple filling into the prepared pie crust. Roll out the second disc of dough and place it over the filling. Cut slits in the top crust to allow steam to escape. Trim and crimp the edges.

Bake the Pie
Preheat the oven to 425°F (220°C). Bake for 15 minutes, then reduce the temperature to 350°F (175°C) and bake for an additional 30-40 minutes, or until the apples are tender and the crust is golden brown.

Slowly add heavy cream and stir until smooth. Remove from heat and stir in vanilla extract.
