Flatbread Preparation

Make the Dough
In a bowl, combine warm water and active dry yeast. Let it sit for 5 minutes until frothy. Add olive oil and salt, then gradually add flour, mixing until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Place in a greased bowl, cover with a damp cloth, and let rise in a warm place for 1 hour.

Preheat Oven
Preheat the oven to 475°F (245°C).

Shape the Flatbread
Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion into a flat oval shape, about 1/4 inch thick.

Prepare Rosemary Garlic Oil
In a small bowl, mix olive oil with minced garlic and chopped rosemary. Brush this mixture over the flatbreads.

Add Cheese
Sprinkle grated parmesan and shredded mozzarella evenly over each flatbread.

Bake
Transfer the flatbreads to a baking sheet and bake in the preheated oven for 10-12 minutes or until the cheese is bubbly and the edges are golden brown.

Once baked, drizzle with balsamic reduction and let cool slightly before slicing.
