    Prepare the Pork Sugo

    In a large skillet, heat olive oil over medium heat. Add the onion, carrot, and celery, and sauté until softened, about 5 minutes.

    Cook the Pork

    Add the ground pork to the skillet and cook until browned, breaking it up with a spoon, about 8-10 minutes.

    Add Garlic and Wine

    Stir in the minced garlic and cook for an additional minute. Pour in the red wine and let it simmer for about 5 minutes until reduced.

    Add Tomatoes and Season

    Add the crushed tomatoes, salt, and black pepper. Stir well and let the sauce simmer on low heat for about 30 minutes, stirring occasionally.

    Cook the Pappardelle

    While the sauce is simmering, cook the pappardelle pasta according to package instructions until al dente. Drain and set aside.

    Combine and Serve

    Toss the cooked pappardelle with the pork sugo. Serve topped with chopped hazelnuts, fresh basil, and grated Parmesan cheese.
