Preparation

  1. 1

    Prepare the Artichokes

Trim the artichokes by removing the tough outer leaves and cutting off the tips. Cut them in half and remove the choke with a spoon. Place them in a bowl of water with lemon juice to prevent browning.

  2. 2

    Cook the Artichokes

In a pot, bring salted water to a boil. Add the artichokes and cook for about 10-12 minutes until tender. Drain and let cool.

  3. 3

    Assemble the Dish

In a mixing bowl, combine the cooked artichokes, white anchovy fillets, bariole olives, chili flakes, and a drizzle of olive oil. Mix gently.

  4. 4

    Add Cheese

Tear the buffalo mozzarella and fontina cheese into bite-sized pieces and fold into the artichoke mixture.

  5. 5

    Season

Drizzle with remaining olive oil, add lemon juice, and season with salt and black pepper to taste.

  6. 6

    Serve

Transfer to a serving platter and enjoy as an appetizer or light meal.
