Prepare the Calamari
In a bowl, combine the calamari rings and buttermilk. Let them soak for at least 30 minutes.

Mix the Dry Ingredients
In another bowl, whisk together the flour, cornstarch, salt, black pepper, and cayenne pepper.

Coat the Calamari
Remove the calamari from the buttermilk, allowing excess to drip off. Dredge the calamari rings in the flour mixture until evenly coated.

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil to 350°F (175°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches, frying for about 2-3 minutes or until golden brown and crispy. Remove and drain on paper towels.

Serve
Serve the calamari hot with pesto aioli and San Marzano sauce for dipping.
